    Adam Michael has this to say “Exotic basil has a very different chemistry to sweet basil. Sweet basil is the safer of the two oils as it contains far more d-linalol and far less estragole. Exotic basil contains on average 85% of estragole (aka methyl chavicol) which is a potential carcinogenic and present at only 20% in Sweet basil.

    The Basil plant (Ocymum Basilicum) takes its name from the Greek word for a king – �basileum’, possibly because the plant was so highly prized that it was considered a King among plants, or maybe because it was an ingredient of an oil for anointing kings. Sir John Parkinson in his herbal says �The smell thereof is so excellent that it is fit for a king’s house’. The plant is still greatly valued in present-day Greece, both for cooking and as a medicinal herb, and has various popular names, such as �Joy of the Mountains’ and �Boy’s Joy’. Pots of it may be found placed at the foot of the pulpit in Greek churches.

Its odor is sweet-spicy, slightly green, fresh, with a faint balsamic-woody undertone and a lasting sweetness. It is produced in very limited quantities (annual world production is less than one metric ton), and the oil ranks among the more expensive essential oils. However, its great strength makes it very useful and generally applicable in fine perfumery and in flavor work."

Use: The Basil plant (Ocymum Basilicum) takes its name from the Greek word for a king � �basileum’, possibly because the plant was so highly prized that it was considered a King among plants, or maybe because it was an ingredient of an oil for anointing kings. Sir John Parkinson in his herbal says �The smell thereof is so excellent that it is fit for a king’s house’. The plant is still greatly valued in present-day Greece, both for cooking and as a medicinal herb, and has various popular names, such as �Joy of the Mountains’ and �Boy’s Joy’.
