Abstract

In this method, a change in state of the water is brought about by cooling upon contact with the evaporator of a refrigerating machine, which evaporator is located in a vessel which contains water which is sent to an external heat exchanger and is then to return into the vessel, in order to be recooled by contact with the ice. Use is made of a mixture of water and another liquid, and the freezing point of the mixture is less than 0 DEG C at atmospheric pressure. The mixture forms a large number of small ice crystals which are not fused with one another. The evaporator consists of the floor of the vessel and of a double floor which is welded therebelow. The blades of a stirring device sweep over the floor of the vessel. The invention comprises in addition the use of the method and of the device for cold treatment (refrigerated processing) of an arbitrary substance in the external heat exchanger, in particular of milk after milking.
