Synopsis
The story of Chef Hidekazu Tojo, the award-winning Master Chef and one of the top tier Japanese chefs in the world. In the restaurant industry he is known by some as the chef who invented the California Roll and for moving seaweed to the inside of rolls as a way to appeal to western palates, but his contributions to the culture of sushi run much deeper than that. His eponymous and now wildly successful restaurant Tojo’s introduced sushi to a western audience and has frequently hosted celebrities including Tom Cruise, Morgan Freeman, Gwen Stefani and many more — but despite his success, he has faced a staggering amount of prejudice since immigrating to Canada in the 70s.
